I love guacamole. Love, love, love it. I like that it can be eaten at any point of the day (you say avocado toast, I say guacamole for breakfast). This is one of those snacks that I can make in just a few minutes and really enjoy. I also throw any “food guilt” right out of the window when I am snacking down on guacamole. Avocados are great for you! Throw in some more delicious veggies and rejoice in the healthy goodness!
I have tried several recipes and have found that this one really is a home run for me! It packs a punch of fresh out of the garden flavor. The best thing about these kind recipes is that you can tweak it however you like. You crave super spicy? Throw in more jalapeno! Cilantro is your jam? (I hear you on that one) Make it rain cilantro!
This is also a great dish to bring to a get together. It is quick and easy to throw together and you don’t have to worry about heating anything up. Throw in a bag of your favorite crunchy snack for dipping (I adore pita chips) and you are good to go!

- 3 large avocados
- 1/2 tomato – large diced (my fave is Roma)
- 1/4 red onion – finely diced
- 1/2 jalapeno – deseeded and finely diced
- Juice of two limes
- 2 tbsp fresh cilantro – roughly chopped
- Salt and Pepper to taste
Depit the avocados and scoop into a medium sized bowl. Mash with a fork. Toss in all other ingredients and mix. Serve with pita chips, veggie sticks, chips, or whatever makes you happy!
If you find that you somehow have leftovers, don’t fret. Just squeeze some lime juice on top, put plastic wrap directly down on top of the guac, and snap a lid on it and pop it in the fridge.
